Cooks at OSP, JBCC prepare hundreds of holiday meals

McALESTER — Cooks at Oklahoma State Penitentiary and the Jackie Brannon Correctional Center have been busy preparing vast quantities of food for today’s Thanksgiving holiday.

At the Jackie Brannon Correctional Center, cooks were preparing meals for approximately 740.

“We just got through doing 350 pounds of sweet potatoes for sweet potato pie,” Brenda Camp, a Food Service Supervisor IV, said of the preparations at the minimum-security prison.

Other work has also been under way or is in the planning stages.

“We’re doing about 350 pounds of turkey roast,” Camp said.

Cooks at JBCC were also preparing 30 pans of dressing, which works out to plenty of poundage.

“We’re doing about 400 pounds of dressing,” said Camp.

Also on the menu is 400 pounds of potatoes, to be whipped up as mashed potatoes during the Thanksgiving Day meal.  That will be served along with  “100 gallons or more” of giblet gravy, according to Camp.

JBCC cooks are also preparing approximately 240 pounds of green beans for the holiday meal.

One-hundred pounds of cranberry sauce and approximately 800 hot rolls are included on the menu.

Also on the menu is approximately 300 pounds of banana pudding,.

It will all be washed down with 60 to 70 gallons of iced tea and lemonade, she said.

Approximately 20 inmates on the morning shift and 23 on the afternoon shift will assist JBCC staffers in preparing the meal, which will be served on Thanksgiving Day, according to organizers of the event.

At OSP, the DOC reported 740 offenders were incarcerated at the maximum-security prison this week.

Included on the menu for this year’s Thanksgiving Day dinner are 43 roasted turkeys, 100 pounds of cornbread dressing and 80 gallons of giblet gravy.

Rounding out the OSP menu are 500 pounds of mashed potatoes, 170 pounds of green bean casserole, 70 pounds of cranberry sauce and 740 fresh-baked dinner rolls.

Dessert includes 32 pan sheets of pumpkin pie and 70 pounds of banana pudding, served with 50 gallons of iced tea.
